Singapore National Day Galette Recipe

Galettes, a French delicacy, consist of a pastry base topped with sweet or savory fillings, folded at the edges for a rustic look. This year, on Singapore's national day, I'm celebrating my 17 years here, making it my home where my heart belongs. I'm thrilled to have my twin sister, Carol as a special guest for this joyous occasion!

For the galette, the ingredients are:

- Base, store brought Puff pastry

- Sugars

- Strawberry, here I use frozen (Frozen strawberries. Fresh Berries are expensive here in Singapore, its perfectly fine to use frozen ones, a lot more economical, just make sure to drain them)

- Strawberry preserve

- Whipping cream, fat content 35%

The steps are:

1. Microwave for 30 seconds to soften the preserve

2. Mix 250g strawberry with preserve.

3. whip 1 cup cream 2 tbs powdered sugar and 1tsp vanila extract. Hand whipped cream is simple and possible! 7 min.

4. Roll out puff pastry to 9 x 12 inch retangular shape.

5.Sprinkle both sides with 2 table spoons of sugar.

6. Form a border, 3/4 inch away from the edge (If the pastry sticks to the board, you can cool it in the fridge first.)

7.Bake 175C for 25-30 min or until golden brown. Let it cool.

8. Form a border by crushing the center portion of the puff pastry, along the line we cut.

9. Decorate the flag with strawberry and whipped cream!
