Level up egg fried rice

Mastering fried rice is a check I wanted to tick off since I started to cook, fueled by my mom horrible fried rice. After all these years of making fried rice, I would like to share some tips with you. So to make good fried rice, the eggs need to be flavorful. Be careful to make sure that the pan is hot but not too hot that it will overcook the egg. To make the rice more fragrant and amalgamated with textures, we add pine nuts stir fried with with green onion and lightly salted. Rice needs to be loose and fragrant. Here, the traditional advice of using left-over rice is true as the rice is not clumpy. To level up the fried rice, you can add seafood flavors with prawns and mullet roe (a Tainan delicacy). Instead of cooking the egg and the rice separately, I coat each grain of rice with raw egg. And to add texture and crunch, we add some onions and carrots. Pre-bake the mullet roe and dice it. Finally, to top it all up, we add some raw leek for that extra layer of aroma. Ingredients: Mullet Roe Garlic Carrot Eggs Prawns Green onions Leek Salt and pepper Rice (one-day-old preferred)
